I have two pickles, I have two pickles, hey hey hey

One of the best scenes in the Little Rascals movie is the pickle scene..

Friday I went over to Aunt Pats to make pickles!!!

#1 – We went into the garden and pick cucumbers, dill,  and jalapenos.

#2 – Wash the cucumbers, dill and jalapenos

#3 – Cut the cucumbers into little circles, we used a mandoline.  Slice the stem end off the jalapenos. Break the dill into little sections and peel the garlic.

#4 - Boil water to sanitize the jars and lids.  Once it boils, add jars and lids. Do not get rid of this water, it will be used in step #9.

#5 – In a sauce pan, add 1 quart Vinegar, 2 quarts water, 3/4 cup iodized salt. Bring to Boil.

#6 – Place 2 heads of dill, 1 clove of garlic, and a jalapeno into the bottom of the mason jars, then fill to the top with cucumbers.

#7 – Once the vinegar mixture is boiling, then add the alum has been added, then pour the mixture into the jars over the cucumbers.  (You don’t want the alum in the water before it boils)

#8 – Cover the jars with the lids and screw on tight.

#9 – Place the sealed jars into a boiling water bath.  Make sure they are submerged/the lid needs to be under water.  Leave them in the water bath for 15 minutes.

#10 – Remove them from the water bath and let cool.

They can be eaten the next day, but I put mine in a cupboard, I want to wait a few weeks before i eat mine…maybe even a couple months.
